I like to have some nice comfort food options up my sleeve and today had a perfect opportunity to use one of Osh’s faves. After a swimming session in the morning, he was really excited to come home to some pizza triangles, with my homemade tomato topping on them.
- Olive Oil
- 1 tin tomatoes (chopped/plum)
- 3 tbsp. Violife creamy
- 1 clove garlic (chopped)
- 1/2 red onion (sliced)
- Dried oregano (1 tsp)
- Black pepper (to taste)
Add a glug of olive oil to frying pan and fry off the onions on a medium heat until soft and starting to brown. Add the garlic and fry off for a minute or so.
Add the garlic and onions to blender, along with all other ingredients and blitz until smooth.
Return the sauce to the pan and simmer for 10 minutes.
I then use the sauce to top some free from bread (I use Asda Free From White Sliced Loaf) as a base for homemade pizzas…not rocket science, but here’s how!
Toast the bread once in toaster, then add enough sauce to cover the bread when spread.
Tip: try to cover all the way to the corners to prevent edged from burning when grilled.
Add topping of your choice (like chopped ham in my version here) and top with cheese substitute of your choice. I’ve used Violife Grated Mild Cheddar here. Grill under a medium grill until cheese melting and serve. We never have any leftovers with this one!
