OshNosh: Oat, Date & Banana snack bars

Ingredients

  • 8 medjool dates – soak in boiling water for 10 minutes, then pit & roughly chop.
  • 1 banana
  • 1 tsp Bicarb of Soda
  • 1 tsp Vanilla Extract
  • 50ml coconut oil (melt by placing container over bowl of boiling water)
  • 225g oats
  • Handful dried cranberries /raisins/dried fruit of choice (optional)

Preheat oven to 180 degrees. Line a small baking tray with greaseproof paper and grease.

Put all ingredients except oats & dried fruit in blender and whizz up to a smooth paste. You might need to scrape down and re-blitz a couple of times to make sure no large chunks of date remain in the mix.

Mix the paste in with the oats in a bowl and then spread onto a lined baking tray.

Bake until golden brown, approx 25-30 mins depending on your oven. Remove from oven and allow to cool in tin. Cut into bars/squares as desired. Store in an airtight container.
